อย่างที่เราเคยเรียนกันมาสมัยเด็กๆ อาหารหมู่สองจากอาหาร 5 หมู่ที่จำเป็นต่อร่างกายคือ คาร์โบไฮเดรต คาร์โบไฮเดรต เป็นสารอาหารที่ให้พลังงานแก่ร่างกาย มีอยู่ในอาหารจำพวก ข้าว เมล็ดพืช ผลไม้ ผัก พืชหัว เครื่องปรุงที่มีรสหวาน นอกจากนี้การการผลิตอาหารเกือบทุกชนิด จะมีน้ำตาลอยู่ ซึ่งน้ำตาลก็มากจากอ้อย หรือ น้ำหวานของพืชนั่นเอง เรียกได้ว่าเราทานคาร์โบไฮเดรตกันตลอดแบบหลีกเลี่ยงไม่ได้ ซึ่งคาร์โบไฮเดรต 1 กรัมจะให้พลังงานแก่ร่างกายประมาณ 4 kcal
ทำไมร่างกายของเราจึงต้องการคาร์โบไฮเดรต
ร่างกายคนเราใช้พลังงานจากสองแหล่งใหญ่คือ พลังงานจากไขมัน และ พลังงานจากคาร์โบไฮเดรต ซึ่งคาร์โบไฮเดรตเป็นแหล่งพลังงานที่สำคัญแหล่งใหญ่ของร่ายกายเลยก็ว่าได้ เนื่องจากเป็นพลังงานที่ใช้ในการทำกิจกรรมและการขับเคลื่อนระบบอวัยวะต่างๆ สมอง หัวใจ ระบบการหายใจ ให้ทำงานและดำรงชีวิตอยู่ได้นั่นเอง
ก่อนอื่นเราต้องเข้าใจหลักการของการย่อยคาร์โบไฮเดรตมาเป็นพลังงานเสียก่อน เมื่อร่างกายได้คาร์โบไฮเดรตเข้าไปไม่ว่าจะมาในรูปแบบใด จะข้าว น้ำตาล แป้ง ขนมปัง ผลไม้ ผัก คาร์โบไฮเดรตเหล่านี้จะถูกย่อยเป็นโมเลกุลที่เล็กลง คือกลายเป็นน้ำตาลโมเลกุลเดียวหรือที่เรียกว่า กรูโคส และจะถูกดูดซึมเข้าสู่กระแสเลือด กระจายไปตามเซลต่างๆและนำไปใช้เป็นพลังงานของระบบอวัยวะต่างๆในร่างกาย
จากนั้นส่วนที่เหลือจะถูกลำเลียงนำไปเก็บเอาไว้ในตับและกล้ามเนื้อ หรือ ที่เรียกว่า "ไกลโคเจน" ส่วนที่เหลือจากเก็บในกล้ามเนื้อและตับ (ไกลโคเจน) อีกส่วนที่เหลือจากเก็บจะถูกตับแปรสภาพกักเก็บไว้เป็นพลังงานสำรองในรูปแบบของไขมัน ซึ่งไขมันเหล่านี้จะค่อยๆสะสมพอกพูนขึ้นใต้ชั้นผิวหนังและตามอวัยวะภายในต่างๆ เราจึงค่อยๆอ้วนขึ้น เพราะอย่าลืมว่าทุกครั้งที่ร่างกายใช้พลังงาน ร่างกายจะใช้พลังงานจากอาหารที่ทานเข้าไปก่อน จากนั้น มาใช้พลังงานไกลโคเจน เมื่อทั้งสองแหล่งนี้หมดลงจึงจะดึงไขมันสะสมมาใช้ ตามลำดับ
